Here we introduce the "Spark Clear" edition of "Amaneko," the sake that lets you enjoy acidity from shiro-koji (white koji), which debuted at the Aramasa Special Hanpukai (subscription series) 2023. A sweet-and-sour citrus aroma of orange, grapefruit and kabosu. The flavour then flips entirely, overflowing with the concentrated juice of green apple, pear, white grape and white peach — truly a grand exposition of fruit. Add the effervescence of bottle-conditioned secondary fermentation and the light creaminess of kimoto, and your heart dances at this festival of deliciousness.

A charity sake Aramasa rushed out to support humanitarian relief in the region around Iran. The flavor calls to mind white grape and white peach. Compared to the usual Aramasa character, there's no sense of kioke or kimoto here — only the sweetness of pure fruit resonates through. The method — brewing pesticide-free Akita Komachi rice with no added yeast and shiro-koji (white koji) — matches the exact same spec as Itan Kyoso Kabushikigaisha ("Heresiarch Co., Ltd."), and this might just be an Astral Plateau that arrived too early to be born.
