Aramasa Shuzo's X-type. A sweet-sour green-apple aroma drifts up faintly, and the creamy scent from the kimoto (traditional starter method) rings through. The flavour starts with gentle sweetness and acidity, hands the baton to the body and mellowness from the kimoto, and at the end the astringency of the kioke (wooden vat) and a slight alcohol note pull the finish together cleanly. In X-type the shifts between sweetness, acidity, astringency and umami are smooth, producing a natural harmony.
