Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Akita's celebrated brand Aramasa Shuzo produces its Private Lab series using experimental brewing methods. Hinotori, which uses the kijoshu method of brewing sake with sake, marked its 15th anniversary in 2023. This lot has a rich, mellow character carrying solid sweetness and umami, which Hinotori's characteristically fresh acidity and an astringency derived from the kioke tighten up into a light, brisk finish — a quintessential, textbook Hinotori.
