No.6 Beast Type, born two years ago from a collaboration with the noted music critic Masanori Ito, is back. It's an elaborate release even from the first edition — a kijoshu (sake brewed with sake) made with kioke shikomi (wooden vat brewing) and bottle-conditioned secondary fermentation — but this second edition adds ori-nuki (lees removed) on top. Refreshing sweetness like green apple and pear, clean acidity, creamy body and umami, and tannins from the wooden vat all intertwine in complex fashion — and so begins the flavour's Hyakki Yagyo (night parade of a hundred demons).
