From the Colors series of Aramasa Shuzo, Akita's celebrated brewery, here's the 2022 vintage of Cosmos, made with Kairyo Shinko. The top-note aroma is gentle, with a pleasant, rose-like floral scent. The flavour is acidity-led, with restrained sweetness and body. The scent of kioke (wooden vat) gradually rises in the mouth, and a gentle astringency draws the curtain on the aftertaste. Since the 2022 rice was slow to dissolve and struggled to carry sweetness, it's a shame that Cosmos's signature sweet-and-sour character is missing.
