Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
From Aramasa's "Private Lab" lineup, where you can enjoy distinctive brewing methods, here's the 2023 vintage of Amaneko. Alongside the yellow koji common in sake brewing, it also uses white koji — the kind used for shochu and the like. An intense acidity and astringency, like grapefruit, race through your whole body like an electric shock. Perhaps because the rice resists dissolving, the sweetness and umami stay restrained, giving a flavour with remarkable clarity.
