Amaneko is known for the acidity that comes from shiro-koji (white koji) brewing, and this one adds lees back in for a secondary fermentation in the bottle. The 2022 edition strikes a fine balance of sweetness, acidity, and the creaminess unique to the lees — the flavor is exactly like an Amaneko cream soda.
