This bottle was released to celebrate the 15th anniversary of Hinotori, the eldest son of Aramasa's Private Lab series. Kimoto brewing, kioke shikomi (wooden vat brewing), the kijoshu method unique to Hinotori of brewing sake with sake, and on top of that bottle-conditioned secondary fermentation with dégorgement — it amounts to a full exhibition of Aramasa's technique. A gorgeous, opulent flavour where Hinotori's characteristic rich sweetness and acidity coexist with creaminess and a refreshing lift.
