An overall score out of 100 based on the sake's taste and aroma. ※Value for money is not one of the measures.
At the end we announce the overall score out of 100. ※Value for money is not one of the measures in the overall score.
TOCKY and Numata score the three axes of taste, aroma and value for money independently, out of 5 in steps of 0.5. Because both scores are listed, any disagreement between them is visible as it stands.
| Axis | Definition |
|---|---|
| Taste | We rate the quality of the taste on a 5-point scale. |
| Aroma | We rate the quality of the aroma on a 5-point scale. |
| Value for money | We rate the value for money on a 5-point scale. |
※Cost covers not only the price but also the effort involved in getting hold of the sake. The rarer the sake, the harsher this measure becomes.
Because difficulty of purchase feeds into value for money, the higher a sake scores the fewer stars it may get for value. Juyondai Shichitare Nijikkan sits at 96 pts with 2.0 for value for money because of this design.
Five axes give the flavour profile. The order of the axes follows the chart in the videos, with Floral at the top.
| Axis | Definition |
|---|---|
| Floral | A floral aroma and taste, like fruit or flowers |
| Crisp | A taste that is clean and refreshing to drink |
| Rich | A taste with plenty of body and a long finish |
| Full | Soft umami and sweetness from the rice |
| Dry | A sharp taste with a shorter finish |
Of the 321 entries, 321 have all five axes recorded. The missing ones are shown as “—”.
