A step forward for sparkling X

From Senkin, the celebrated sake representing Tochigi, here's Organic Nature X. The Organic Nature line includes a kijoshu and a nigori, but in recent years a sparkling version made through secondary fermentation in the bottle was born. The sparkle, produced by fermentation that keeps going after bottling, is intense yet fine-grained. A gorgeous sweet-tartness and the pale richness of the nigori ride the popping bubbles and spread all through your mouth and heart.

The brewery's founding year, location, owner, toji, its thinking on rice and the account of “Edo-gaeri” are based on the Senkin official site (senkin.co.jp) and the brewery database Sakenomy. The definition of “Edo-gaeri” is quoted verbatim from the official site.
Baba, Sakura, Tochigi; founded in 1806 (Bunka 3). The sake is made by the 11th-generation owner Kazuki Usui and his younger brother Masato Usui, the toji (master brewer). Kazuki was a sommelier before he came back to the brewery. The brewing water rises from beneath the brewery, and the paddies that grow its sake rice lie on the same vein.
That thinking is “Domaine Sakura”, brewing built around rice grown in Sakura. The brewery manages the foundation seed stock of Kamenoo and is advancing an “Organic Town” plan to make all of its sake rice organic. In 2024 it rebranded under the banner “Edo-gaeri” and set a policy of moving every sake to kimoto, the traditional starter method. The brewery describes this as “respecting techniques that can be called the origin of sake brewing, pursuing the ideal ingredients, and modernising them in Senkin's own way”.
The 26 entries in Nihonshu Daizukan average 83.0 pts. Alongside the three core lines of Modern, Classic and Retro sit the seasonal Yukidaruma and Akatombo, the United Arrows collaboration, and Organic Nature, brewed without added yeast.
