Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Senkin, the brewery leading Japan's natural-sake movement, teams up with Sakelab Tokyo, a pioneer among sake YouTubers, for the collaboration brand 'Modern Senkin Muku Nama.' This one shares the same usunigori (lightly cloudy) muroka nama genshu (unfiltered, unpasteurised, undiluted) as that release, but this time it's a jikagumi (bottled straight off the press) model. It seems Sakelab Tokyo's Kai bottled it by hand himself. This is jikagumi through and through. A bursting fizz and clear sweetness are set off by acidity, and then a wild umami typical of jikagumi lets out its first cry, right this moment.
