"Sakura", Senkin's hanami sake, released every spring. Here is the first "Sakura" from the new Senkin, which has switched its entire production to kimoto under the concept of "Edo-gaeri" (a return to Edo). The nose has pale nuances of violet and cherry blossom, along with the dry bite of alcohol. The palate is lean overall, with sweetness especially restrained. Umami and acidity lead, and bitterness slowly closes the curtain on the finish.
