Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
This is the first "Aka-tonbo" since the brewery shifted entirely to kimoto brewing. It's characterised by an acidity brimming with the lactic quality that comes from kimoto. From the moment you tilt the glass, you sense a yogurt-like acidity and a soft body. The flavour, too, is a straightforward acidity. Against a cool, transparent character where a faint umami and sweetness are only barely felt, a sharp, piercing acidity stretches on and on, endlessly. Acidic enough, you might say, that even a dragonfly couldn't survive in it.
