Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
From Aramasa Shuzo's Private Lab, here we introduce "Nirugame." Its mouthfeel has a clarity you wouldn't expect from a lightly-polished sake, though the rice-derived umami is faint too, with a light acidity running through in a delicate flavour. Rising temperatures year after year have made the rice harder to dissolve, so the rice-polishing ratio was changed from 88% to 80% to maintain quality. The brewery's own comment recommends serving it at room temperature, but I'd actually recommend chilling it well and enjoying its refreshing coolness instead.
