Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Here we introduce "AKABU MOUNTAIN" from Akabu Shuzo, a brewery representing Iwate Prefecture. It's a bottle from the AKABU EARTH series, built around a low-alcohol axis. The aroma is a clean, ginjo-style fragrance reminiscent of clear forest air. Sweetness and acidity stretch out in a great arc, and a complex, full-bodied finish lingers long. While it has the easy drinkability specific to low-alcohol sake, the way sweetness, acidity and umami intertwine in complex fashion brings to mind a deep, fog-shrouded forest.
