Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
From the Tsuchida series by Tsuchida Shuzo, a brewery in Gunma committed to natural brewing methods, we introduce its true essence: 'Tsuchida Jo.' Alongside Tsuchida's usual methods — using table rice, a rice-polishing ratio of 90%, and no added yeast — this one uses Sasashigure grown in Gunma without fertilisers or pesticides. A kimoto-like acidity (kimoto being the traditional starter method) and a slightly aged aroma reminiscent of raisins. A mellow, honey-like sweetness settles comfortably into the body. Rich in flavour, yet the finish is clean and easy to drink.
