Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
A sake brewed by Obuse Winery, a rare wine producer in Nagano Prefecture, using a mixed fermentation of yeast No.1 and yeast No.2 that the winery has carried on through its own in-house cultivation. The aroma is somewhat restrained, with plant-like nuances like rush grass and lemongrass, plus a banana-like fruitiness. The flavour is led by a slow, seeping acidity that smoothly shifts into umami and body.
