Tenbi began brewing in Reiwa 2 and has been making remarkable strides ever since. This year, from May through August, it is releasing a monthly 'Different Rice Varieties Series.' We introduce the bottle released in July, made with Aiyama from Banshu, Hyogo. Aiyama is known for its rich sweetness and umami. Its cultivation is so difficult that it once fell out of use, earning it the name 'the phantom sake rice.' Compared to Akaiwa Omachi, its acidity is lighter, and the balance between its refreshing sweetness and juicy richness is exquisite.
