"Kaze no Mori," a Nara Prefecture brand with a long history dating back to its founding in 1719. Ikakidori is a method where a bamboo-colander-like tool called an ikaki is sunk into the tank, separating the pressed sake from the mash without ever exposing it to air. It prevents oxidation, letting you taste outstanding freshness. The top-note aroma is a floral, blossom-like scent, and the aroma in the mouth is a deeper, more layered ginjo aroma. A crystal-clear, sharp flavour makes a strong impression.
