Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Mizuhana, the new label from Yucho Shuzo of Nara, a brewery with a long history stretching back to its founding in 1719. It aims to bring techniques handed down from ancient Nara into the present, and is brewed in oogame shikomi (large earthenware jar fermentation) at a dedicated Mizuhana brewhouse. This release, No. 0, recreates a method recorded in the 1489 "Goshu no Nikki" (Sake Diary). A tingling sourness, like biting into a pineapple, is the defining trait.
