We introduce “Jikon Junmai Daiginjo Hakutsurunishiki”, brewed by Jikon with Hakutsurunishiki. Rich sweetness and refreshing acidity are the main axis of the flavour. Lemon and grapefruit, plus a pure sweet aroma like candyfloss. On the palate, a honeyed sweetness and strong grapefruit and lemon acidity. After the dense sweetness, acidity pulls the whole flavour together, and umami spreads faintly into a clean, gentle finish.
