Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
From Ohmine, the brewery revived in 2018, here's Ohmine 3grain "Fuyu no Otozure" (Winter's Arrival), with its beautiful label of a snow maiden standing in a winter landscape. A tropical sweetness like fully ripened banana spreads through the mouth alongside a creamy richness from the nigori. From the back half, bitterness and acidity pull together neatly, and the finish runs on the short side. It's an outstanding match for mellow, richly savory dishes like butter or miso.
