From Tochigi's celebrated brand Senkin, here's "UA Kuwagata Awasake," a collaboration piece with United Arrows. This time, a newly applied secondary fermentation in the bottle has given birth to a sake so intense it could shatter the bottle in the summer heat. An electric acidity reminiscent of lemon and lime delivers a sharp, crisp edge, while the rich umami born from the origarami (with lees) creaminess creates a duality that makes the flavour utterly captivating.
