Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Ginsen — upgraded on the label after the polishing ratio moved from 50% to 45%. The top note is an intensely rich milk and cream, alongside a refreshing, sweet-tart apple aroma. The palate is a harmony of concentrated sweetness and rich umami. The finish is short: after the flavor explodes at full throttle, umami and bitterness bring the curtain down cleanly. Despite being rich, that short finish has evolved it into a flavor that's both deep and light on its feet.
