Effectively the second instalment of a special Hanpukai (subscription series) that doubles as an Aramasa research presentation. A trial brew of a method called kanae hakko (three-way fermentation), which runs lactic acid bacteria fermentation at the same time as saccharification and alcoholic fermentation. The sweet-tart flavour, like apple combined with cream cheese, and the sparkling crispness are irresistible.
