It's the sake that sparked today's hojun umakuchi (rich, mellow) boom, and thanks to its high popularity and low production, it sits at SS-tier for difficulty to obtain. This is made with Sakemirai, the Yamagata sake-brewing rice that Juyondai itself created — a gorgeous aroma and pleasant sweetness, joined by a faint bitterness, for a complex flavour.
