Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
You may not be familiar with the name Shimizu Seizaburo Shoten, but you've likely heard of "Zaku." It's a brewery representing Mie Prefecture, chosen even as the toast sake at the Summit. This time we introduce a bottle made with Hakutsurunishiki, the sake rice developed by Hakutsuru Shuzo. A gorgeous ginjo aroma with the gentle scent of joshinko (rice flour) and shiratama (sweet rice dumplings). First, a soft sweetness and umami soak through, and the acidity that appears in the second half shapes it into a clean, crisp flavour.
