Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Ishidaya, the top tier of Kokuryu, the celebrated Fukui sake. A rich ginjo aroma, an acidity like sour cream, and a gently perfumed nuance of cashew nut all carry a sense of aged flavor. On a foundation of acidity, a creamy richness and a plump, rice-derived umami harmonize and spread slowly through, before acidity and a slight bitterness bring the curtain down cleanly at the end.
