From "Ubusuna," the label Hananoka Shuzo brews with devotion to the terroir of the Kikuchi River basin, here's "Kabashiko Shinojo." This rice, read "kabashiko," is an ancient variety cultivated in the Edo period, with a distinctive toastiness. At first it's a light flavour with a fully ripened fruit aroma, but as the aftertaste sets in, it shows its true colours — the fragrance of kabashiko rice sprouts forth and proves its one-of-a-kind identity.
