"Sakemirai" is the sake rice developed by Takagi Shuzo, the parent of the "hojun umakuchi" (rich and mellow) boom. It's also supplied to other breweries, and sake made with Sakemirai is quality you can buy with confidence. Tilt the glass and a rich, floral aroma bursts forth, fresh and clear. A firm flavour of sweetness and acidity spreads to fill the mouth, and umami with a slight bitterness bring the aftertaste to a beautiful finish.
