Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Juyondai, the sake that sparked the recent hojun umakuchi (rich, mellow-umami) boom. Its quality has driven its popularity ever higher, making it a poster child for hard-to-find sake. Here we introduce Ginsen, said to be relatively easier to get hold of among the Juyondai lineup. A cool, green-apple-like fruit aroma sits alongside a calm ginjo aroma. The mouthfeel is remarkably smooth and gentle; a well-balanced sweetness and acidity seep in slowly, a supple umami weaves everything into harmony, and the stage reaches its finale.
