希少な日本ワインを製造する長野県の小布施ワイナリーが冬季限定で醸造する日本酒「ソガペールエフィス」から、ヌメロシスをご紹介。従来は6号酵母で醸されていたが、今年は6号酵母に2号酵母を加えて造られた。フローラルで華やかな香りの一方、味わいはやや辛口。梅のような酸味とミネラル感溢れる塩味が効いた、キレの強いシャープな味わい。
