普段は7号酵母を使用する油長酒造が、新政酒造から提供された6号酵母で醸した「ALPHA6」をご紹介。2年目となる2021ビンテージは、白麹を使用しより酸味のある味わいに仕上がっている。亜麻猫のシルバータグが掛かった真中採りバージョンは、圧力をかけずに滴り落ちた雫を集めたお酒。通常バージョンより味わいが濃厚で、6号酵母繋がりで例えるなら、陽之鳥に近い。
