Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
"Private Lab" is Aramasa's lineup brewed with distinctive methods. Here we introduce "Hinotori," made using the kijoshu (sake brewed with sake) method. Its rice is Miyamanishiki, the same variety used for Lapis Lazuli. You can enjoy a rich aroma and a weighty, full-bodied flavour, but the aroma is especially distinctive: raisin, pear, cinnamon, and a faint glue-like note of the kind found in aged sake. A museum of aromas awaits here.
