Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Ine to Agave has set up a brewery on Akita Prefecture's Oga Peninsula and is aiming to obtain a new sake brewing licence. Its representative, Mr. Okazumi, was the founding master brewer at Konohanano Jozosho, a doburoku (unpressed cloudy brew) brewery. Doburoku is his forte. The mouthfeel is exceptionally fine, like silk fabric. If you were blindfolded, you might not even realise it's doburoku. A fruity, banana-like rich aroma, a smooth, sake-like finish going down, and a distinctive savoury note not found in regular sake linger pleasantly in the aftertaste. Everything about it is groundbreaking.
