Nichinichi Jozo, founded by Hidehiko Matsumoto, long-serving toji at Sawaya Matsumoto. This is the Jika Nakagumi (middle-cut jikagumi) type of 'Nichinichi Kame no O,' released via UTAGE. The effervescence that comes from jikagumi (bottled straight off the press), together with a plump, banana-like sweetness, feels wonderful. A faint rough note lingers in the finish — could this be the legendary 'kame flavour' everyone talks about? Kame no O's character is fully expressed here.
