Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Introducing 'Ubusuna Yamadanishiki Shichinojo.' In addition to the conventional Rokunojo method, this piece uses 'Shiori,' the brewing method recorded in the Kojiki as the one used to make the sake that felled Yamata no Orochi. It's what's known as kijoshu, using sake for part of the brewing water. A dense sweetness, a gentle acidity, and a richness that stretches long into the finish. Complex nuances of blood orange, honey, chocolate, and raisin — enough to captivate even the mythical serpent.
