Tenbi, which began brewing in Reiwa 2 (2020) and has been advancing remarkably fast, is running a "different rice each month" series from May through August this year. Here we introduce the bottle released that month, made with Akaiwa Omachi from Okayama. Akaiwa Omachi is Omachi rice grown in the Akaiwa district — truly top-grade stuff. Tip the glass, and out pours a sake where sweetness, acidity, and umami become one, a beautifully finished, exquisite balance that would leave gods, angels, and spirits alike drunk on it
