Nichinichi Jozo was founded by Matsumoto Hidehiko, who served for many years as toji (master brewer) at Sawaya Matsumoto. Having shown his endlessly adaptable brewing skill in the earlier Musha Shugyo series, the first sake he sends out under the Nichinichi Jozo name is an ideal food-pairing sake. The aroma is a gentle fruitiness. The mouthfeel is smooth, with soft sweetness and umami spreading across the palate. A pleasant acidity follows, closing the finish cleanly.
