Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
The Aramasa NO.6 x-type from when Tokky and Numata launched the channel, opened now after six years. Maturation that progressed at an extremely low -5 degrees has drawn out a dense sweetness of honey and rum raisin and brought a toasted brown-rice note, while the fresh sweet-tartness is still alive and well: it has evolved into a layered, deeply flavoured sake. This release was not brewed in kioke (wooden vat), so towards the finish the job of pulling the flavour together falls not to astringency but to acidity and the cut of the alcohol, making it weightier in flavour than the present-day version.
