From Hanaabi, one of the hardest-to-find sakes in the country and the pride of Saitama Prefecture, we introduce 'The Match Junmai Ginjo,' blending Yamadanishiki and Omachi. An intense fragrance — like genuine tropical fruit, like flowers and plants from vegetation clearly different from Japan's — jolts the brain awake. The flavour brings a rich sweetness, of course, and a fresh, bursting acidity, followed by a bitterness that spreads in afterward to finish off a superb lingering aftertaste.
