Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Introducing Ubusuna Homasu Rokunojo, a sake nurtured by the earth of Kumamoto. Rokunojo's defining features are kioke shikomi and no added yeast. Rather than adding the yeast needed for sake fermentation by hand, the brewery relies on wild yeast native to the brewery itself — a masterpiece made possible by the brewery's high level of skill in working alongside nature. A fresh, green melon aroma with fully ripened banana and a hint of cream. Onto the acidity and effervescence, a rich sweetness blossoms.
