Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
A sparkling sake rare for Jikon — fermented a second time in the bottle, then finished with a dégorgement (lees disgorged) that removes the sediment. A syrupy, viscous sweetness meets an aged toastiness like honey and cinnamon. The powerful, fine-grained fizz is a pleasure too. Caution when opening — the way it erupts, Mentos-and-cola style, is a spectacular sight, and a disaster.
