From Senkin, the celebrated sake of Tochigi, comes 'Yukidaruma (Snowman),' arriving every year as winter approaches. Being affordable and easy to find, plenty of people have surely been led in by him and pulled into the Senkin swamp (the deep end of Senkin devotion). Even as a nigori, the beautifully clear flavour that defines Senkin is alive and well. This year's rice in particular resists dissolving, giving a nigori with restrained sweetness, a faint bitterness, and a crisp, clean finish, all while staying creamy.
