Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Kaze no Mori, the flagship brand of Yucho Shuzo, a brewery based in Nara — the birthplace of sake. This bottle, brewed as an essential piece of Yucho Shuzo's future plans, is a low-milled sake at a seimai buai (rice-polishing ratio) of 90%. It's astonishingly free of off-flavors, with a gorgeous sweetness and a pleasant fizz. The bitterness distinctive to low-polish rice and a mineral quality from the brewery's extremely hard water come together into a clear, clean finish.
