PRIVATE LAB, Aramasa Shuzo's lineup brewed with distinctive methods. Here we introduce Hinotori, made using kijoshu (sake brewed with sake). My impression of the 2021 vintage was of a character with real presence even among the Sugi Aramasa lineup, with a rich aroma and a weighty flavor — but through kioke shikomi it's since converted into a hard-hitter that comes swinging with a log of Akita cedar.
