Among the closest shapes (at most one axis off by one step), ordered by score. Re-reviews of the same sake are excluded and each brewery appears once. Where fewer than four qualify, the next closest shapes fill the gap.
Ryozeki Shuzo, the Akita brewery that's Tokki's spiritual home. It receives technical support from Takagi Shuzo, brewer of the legendary Juyondai, so the quality here runs very high, and it's become one of the harder-to-find breweries around. Out of its many labels, this time we introduce Hanamura. The aroma opens with a rich, ripe fruitiness that trails off into a fresh, green note like a linden tree. Tip the glass, and after a pleasant sweetness rushes through, a huge wave of dense umami comes rolling in.
