'DATE SEVEN,' a unit formed by several sake breweries. It looked like the story had wrapped up when the final instalment came out last year, but a sequel has now been decided. For this season, the breweries brew using the same sake rice and milling ratio. Koganesawa style is characterised by a gentle flavour where umami is nicely entwined with acidity. Sweetness is kept restrained, and you can enjoy a gentle, elongated, lingering note of umami in the mouth.
