GLOSSARY
A look at Juyondai Nakadori Josohaku Banshu Yamadanishiki. The Josohaku, formerly sold as a junmai ginjo at a polishing ratio of 50%, here appears promoted to junmai daiginjo at 45%.
A fresh, dense sweetness, as though apple and pear had been compressed to their essence, meets a rich body from the rice; a sharp acidity and a touch of bitterness give the flavour its outline, and the whole reaches complete harmony. This is not the lighter Juyondai of recent years but the Juyondai of old.
