Here's the Junmai Daiginjo from Fukushima's celebrated brand Hiroki. A transparent sake. An invisible sake. The top note is the gorgeous fragrance of fully ripe melon. One sip and it overflows with a fresh, refreshing aroma of green apple, white peach, mint, and lemongrass. The flavour is light and transparent, with a gentle umami and the sharp bite of alcohol stretching out in good measure before disappearing cleanly. A sake to savour for its beautiful in-mouth aroma.
